Here is a recipe that is great (although picture-less) for a fall dinner! This is our favorite meatloaf, and it makes the yummiest sandwiches the next day, too.
Cheeseburger Meatloaf
1 lb. ground beef
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. garlic powder
4 slices thick bacon
1 small onion, chopped
1 cup grated cheddar cheese
1/2 cup sour cream
1 cup crushed Ritz crackers
1 tsp. seasoned salt
2 slices white bread
Cook bacon until cooked but still chewy, not crispy. Remove bacon and add chopped onion, cooking for 3-4 minutes or until soft. Combine ground beef, chopped bacon, cooked onions, all seasonings, cheese, sour cream and crackers. Mix together well.
Line a loaf pan with the 2 slices of bread. Shape meat mixture into a loaf shape and place on top of bread. (The bread will absorb the grease as it bakes. Discard the bread after baking.)
Bake at 350 for 45 minutes. Let rest for 10 minutes or so before slicing.
This would be yummy served with these potatoes.
